About the Producer
After studying law in Bologna, Davide Febo decided about 5 years ago to home to Abruzzo to make natural wine and extra virgin olive oils with traditional abruzzese varieties as a family project, basing his farm & winery on vineyards his grandparents on both sides of his family maintained for years, in both Pescara and Chieti areas. Hence their wines have nuances, reflecting these 2 winemaking areas in Abruzzo. His wines and extra virgin olive oils are farmed and made organically, fermented in cement, relying on native yeast fermentation, and are unfiltered.
Extra virgin olive oil is one of the great treasures of Italian cooking, but it is also surrounded by myths. From color and bitterness to “light” oils, flavor add-ins, cultivars, and the idea that all olive oil is basically the same, this FAQ cuts through the confusion and shows what real EVOO is all about. If you want to understand what makes a great olive oil truly great, and why source, craft, and tasting matter so much, this is the place to start.
