Try them with Ojai Pacific View Dolcetto Red Wine, an All American Combo!

During our March 28th VeroTalk, Ojai Pacific View owner Patti Mitchell and her chef-daughter Jacqueline shared their favorite way to enjoy Jacqueline’s delicious chili. While Jacqueline lives and works as a chef in foodie and wine haven Piedmont Italy, she misses good ole’ American food every so often. Without the usual ingredients on hand since she lives in Northern Italy, she improvised with different ingredients and simplified it, so easy for you to try at home too. This versatile chili is wonderful eaten alone, served over rice, and especially over hot dogs! Chef Jacqueline stuck true to her American spirit in the creation of this recipe!

Patti and Jacqueline were pleasantly surprised how well their California Dolcetto paired with this flavorful chili. While not an obvious pairing, the fruitiness of the dolcetto balanced nicely with the spicy profile in the chili, and the tannins cut through the fattiness of the hot dog and bacon.


Old-Fashioned American Chili Dogs

Procedure:
1. Sauté garlic and onion until tender. Add the bell pepper and cook a moment longer.

2. Add ground beef and brown well, stirring to crumble. Add beans, tomato sauce, and broth (as needed to get correct consistency). Add spices.

3. Cook on a low simmer for about 30 minutes, or until beef is tender. Taste and adjust spiciness with cayenne as necessary for personal preference.

4. Wrap each hot dog with a bacon slice; securing if necessary with a toothpick. Cook hot dogs via desired method: grill, oven, or in the skillet until hot dog puff and bacon becomes crispy.

5. In each bun, spread a spoon of chili, and then place a hot dog on top (removing toothpick if used). Add more chili on top, even so it spills over onto the plate… these are meant to be messy!

6. Garnish with shredded cheese and sour cream.

Cooking Time: 30-45 minutes
Portions: 4 heaping servings

Ingredients:
1 pound ground beef
1 Green Bell Pepper, 1 inch pieces
1 large Onion, chopped
1 clove Garlic, minced
14 oz can Tomato sauce
6 oz can white or red beans
¼ tsp. Cayenne Pepper
½ tsp. Oregano
1 tblsp. Paprika
1 tsp. Cumin
Salt and Pepper
Beef Broth
For Hot Dogs:
4 Hot Dogs with Buns
4 slices Bacon
To Garnish:
Sour Cream
Shredded Cheese
