We visited with a 100 year old family bakery, Panificio Tubertini, in the food capital of Italy: Bologna! Watch on YouTube as we got an inside look into the day-to-day life in this medieval city which is home to what many claim to be the oldest university in the world. More authentic then this does not exist!
Bakeries in Bologna, besides making bread and sweets, also make pasta. We were part of a demonstration of pasta making and, as it goes without saying, we tasted a local wine, from the Bolognese Hills, the local go-to, an organic Pignoletto Frizzante by Tomisa.

Named after a Greek mythology legend, this semi-sparkling, ‘frizzante’ organic white wine is made from 40 yr old organic ‘Pignoletto’ vines in the middle of a national park in the Bolognese hills in Italy. 2017 was a warmer year producing a wine with a deep straw yellow and ripe fruit and apple sauce aromas and taste. Aged for 4 months in concrete on the lees, un-oaked.

Fermented in concrete, the beautiful fruit stands out in this pretty organic red wine from the hills just outside Bologna. A favorite wine in consumer tastings due to it color, nose, and flavor. Won the 5 grape award with the italian sommelier association.
