Irene Balim and her partner Fernando have 15 acres of vineyards, in the Modenese Hills up 1800 feet high. They farm organically and make wine with native yeast fermentation from native varieties. Despite being in the heart of 'Lambrusco country', they differentiate by focusing on the ancestral method (aka Pet Nat) or classic method for their sparkling wines, instead of the 'usual' charmat method, and they focus on rare local grapes like Uva Tosca and Malbo Gentile.
